Abstract

Penelitian tentang Etnobotani Tumbuhan Pangan Pada Pasar Tradisional dan Pasar Modern Di Daerah Harapan Indah, Bekasi, Jawa Barat dilakukan bulan September 2021-Januari 2022. Tujuan penelitian untuk mengetahui keanekaragaman jenis tumbuhan, bagian yang dimanfaatkan, pemanfaatan tumbuhan, cara pengolahan tumbuhan dan dijadikan bahan ajar LKPD materi keanekaragaman hayati. Jenis penelitian ini adalah penelitian deskriptif kualitatif dengan menggunakan Teknik purposive snowball sampling. Responden yaitu seluruh pedagang yang menjual bahan pangan segar yang terdiri dari 76 responden. Berdasarkan hasil penelitian diketahui bahwa pada pasar tradisional terdapat 92 jenis tumbuhan, 64 genus dari 38 famili dan pada pasar modern hanya terdapat 117 jenis tumbuhan, 84 genus dari 50 famili yang dimanfaatkan sebagai tumbuhan pangan segar. Famili yang paling banyak ditemukan yaitu Famili Brassicacea. Bagian yang dimanfaatkan paling banyak digunakan di pasar tradisional dan pasar modern yaitu bagian buah dengan jumlah spesies sebanyak 56 (40.87%) dan 42 (38.53%). Pemanfaatan tumbuhan yang paling banyak yaitu sebagai buah dan sayur dengan masing-masing sebanyak 38 (30.6%) dan jika di pasar modern sebagai sayur sebanyak 33 (33.3%). Cara pengolahan tumbuhan yang paling banyak di pasar tradisional dan pasar modern yaitu dengan cara direbus dengan masing-masing sebanyak 59 (35.32%) dan 47 (35.60%). Dari semua spesies yang dimanfaatkan sebagai tumbuhan pangan segar, kentang (Solanum tuberosum L) memiliki FL paling besar yaitu 37 (48.68%) dan cabe rawit (Capsicum frutescens L) memiliki FL kedua terbesar yaitu 28 (36.84). Dari penelitian observasi tumbuhan pangan dikembangkan menjadi bahan ajar Lembar Kerja Peserta Didik (LKPD)./ Research on Ethnobotany of Fresh Food Plants in Traditional Markets and Modern Markets in the Harapan Indah area, Bekasi, West Java was conducted in September 2021-January 2022. The purpose of the study was to determine the diversity of plant species, the parts used, the use of plants, how to process plants and make them raw materials. teach LKPD material on biodiversity. This type of research is descriptive qualitative research using purposive snowball sampling technique. Respondents are all traders who sell fresh food consisting of 76 respondents. Based on the research results, it is known that in traditional markets there are 92 species of plants, 64 genera from 38 families and in modern markets there are only 117 plant species, 84 genera from 50 families which are used as fresh food plants. The most commonly found family is the Brassicacea family. The part that is used the most in traditional and modern markets is the fruit part with 56 (40.87%) and 42 (38.53%) species. The most use of plants is as fruit and vegetables with 38 (30.6%) each and 33 (33.3%). The most common way of processing plants in traditional markets and modern markets is by boiling them with 59 (35.32%) and 47 (35.60%) respectively. Of all the species used as fresh food plants, potato (Solanum tuberosum L) had the largest FL of 37 (48.68%) and cayenne pepper (Capsicum frutescens L) had the second largest FL of 28 (36.84). From observational research, food plants were developed into teaching materials for Student Worksheets (LKPD).
