Abstract
Bonggol pisang merupakan salah satu bagian tanaman pisang yang jarang digunakan oleh masyarakat, sehingga menjadi limbah lingkungan. Penelitian yang dilakukan bertujuan untuk mengetahui aktivitas antibakteri dan analisis fitokimia bonggol pisang kepok. Pengujian antibakteri dan konsentrasi hambat minimum (KHM) dilakukan dengan metode difusi agar, sedangkan analisis fitokimia dilakukan dengan metode Harborne. Bakteri uji yang digunakan dalam penelitian adalah Escherichia coli dan Salmonella typhi. Ekstrak bonggol pisang kepok diperoleh melalui metode maserasi dengan menggunakan pelarut etanol 90%, etanol 70%, dan akuades. Hasil penelitian menunjukkan bahwa ekstrak etanol 90% dari bonggol pisang kepok memiliki aktivitas antibakteri terbesar dan nilai KHM terendah dibandingkan dengan ekstrak etanol 70% dan ekstrak akuades terhadap Escherichia coli dan Salmonella typhi dengan zona hambat masing-masing sebesar 6.672 dan 7.005 mm. Semua ekstrak bonggol pisang kepok mengandung senyawa metabolit sekunder berupa flavonoid, saponin, tanin, dan steroid. Kata kunci : antibakteri, bonggol pisang kepok, fitokimia Banana tuber is one part of a banana plant that is rarely used by the community, so it becomes environmental waste. The research aimed to determine the antibacterial activity and phytochemical analysis of kepok banana tuber. Antibacterial testing and minimum inhibitory concentration (MIC) were carried out by agar diffusion method, while phytochemical analysis was carried out by the Harborne method. The bacteria used in the study were Escherichia coli and Salmonella typhi. Kepok banana tuber extract was obtained through maceration method using 90% ethanol, 70% ethanol, and aquades. The result shows that 90% ethanol extract from kepok banana tuber had the greatest antibacterial activity and the lowest MIC value compared with 70% ethanol extract and aquades extract against Escherichia coli and Salmonella typhi with inhibitory zones of 6,672 and 7,005 mm respectively. All kepok banana tuber extracts contain secondary metabolites of flavonoids, saponins, tannins and steroids. Keywords : antibacterial, kepok banana tuber, phytochemical
