Abstract
Di zaman perkembangan teknologi yang semakin pesat, memberikan pengaruh juga terhadap perubahan pola makan yang instan. Sayangnya banyak makanan dan minuman ini tidak mengandung nutrisi yang baik bagi kesehatan seperti sayur dan buah. Oleh karena itu, dibutuhkan suatu pangan fungsional yang mengandung bahan pangan yang bernutrisi dan bergizi bagi konsumennya. Salah satu pangan fungsional yang popular dan disukai masyarakat adalah yoghurt. Yoghurt dengan starter L. casei komersil memiliki banyak manfaat untuk kesehatan salah satunya mencegah kanker. Yoghurt juga dapat dikombinasi dengan buah – buahan untuk lebih meningkatkan efek kesehatannya seperti buah goji beri (Lycium barbarum). Buah ini memiliki kandungan polisakarida yang meningkatkan respons imun, efek anti-glaukoma, anti-kanker. Hal inilah yang mendorong penulis untuk meneliti mutu organik serta potensi anti kanker yoghurt goji beri dengan starter L. casei komersil dengan metode brine shrimp lethality test (BSLT). Larva yang mati pada uji BSLT akan dihitung dengan analisis probit untuk mendapatkan LC50 Uji organoleptik dilakukan dengan menilai parameter warna, aroma, rasa, tekstur, dan kesukaan yoghurt goji beri dengan yoghurt komersil yang juga mengandung starter L. casei komersil yang dilakukan dengan dua kali pengulangan. Uji BSLT dilakukan pada konsentrasi 0.1%, 0.5%, 1%, 1.5% dan kontrol. Uji ini dilakukan tiga kali replikasi di setiap konsentrasi dan dilakukan dua kali pengulangan. Uji organoleptik menunjukkan parameter warna, rasa, tekstur, dan kesukaan memiliki perbedaan nilai rata – rata yang bermakna antara yoghurt goji beri dengan yoghurt komersil dan parameter aroma tidak memiliki perbedaan nilai rata – rata yang bermakna antara yoghurt goji beri dan yoghurt komersil. Hasil uji BSLT menunjukkan kematian larva di semua konsentrasi kecuali kontrol yang membuktikan bahwa yoghurt goji beri memiliki kandungan bioaktivitas yang berpotensi untuk mencegah kanker./ In this era of increasingly rapid technological development, it also has an effect on instant changes in eating patterns. Unfortunately, many of these foods and drinks do not contain nutrients that are good for health such as vegetables and fruits. Therefore, we need a functional food that contains nutrition for consumers. One of the functional foods that are popular and well-liked by people is yoghurt. Yoghurt with starter commercial L. casei has many health benefits, one of which is preventing cancer. Yoghurt can also be combined with other fruits to enhance its health effects, such as goji berries (Lycium barbarum). This fruit contains polysaccharides that can improve immune response, has antiglaucoma as well as anticancer effect. This is what prompted the author to investigate the organic quality and anticancer potential of goji berry yoghurt with the starter L. casei komersil using the brine shrimp lethality test (BSLT) method. The dead larvae in the BSLT test will be counted by probit analysis to obtain LC50 value. Organoleptic tests were carried out by assessing the parameters of color, aroma, taste, texture, and preference for goji berry yoghurt with commercial yoghurt which contained the same starter as goji berry yoghurt. The BSLT test was carried out at concentrations of 0.1%, 0.5%, 1%, 1.5% and control. This test was replicated three times at each concentration and was carried out twice. The organoleptic test showed that the parameters of color, taste, texture, and preference had a significant average difference between goji berry yoghurt and commercial yoghurt . The aroma parameter did not have a significant average difference between goji berry yoghurt and commercial yoghurt. The results of the BSLT test showed larval mortality in all concentrations except the control which proved that goji berry yoghurt contains bioactivity that has the potential to prevent cancer
